Chocolate Cupcakes

Dear readers, I have discovered the most amazing recipe for chocolate cupcakes. I found it on Food and Cook and it’s absolutely delicious.




85gr Butter (room temperature)

100gr of sugar

75gr of soft brown sugar

2 eggs

185gr of pastry flour

20gr unsweetened cocoa powder

1’5 teaspoon baking powder

1/2 teaspoon of salt

250 ml of milk

1 teaspoons pure vanilla extract

120 g. de chocolate

Chocolate Frosting

300 g de chocolate for baking ( Valrhona 61%)

250 ml cream

50 gr butter

2 teaspoons of brandy or any other liquor (optional)



Preheat oven to 170 degrees C and line muffin cups with paper liners.

We start by melting the chocolate, we can either do it over simmering water or microwave, just remember to check every 30 seconds.

 In a bowl mix your flour, cocoa powder, baking powder and salt.

 Then in the bowl of your electric mixer, or with a hand mixer, beat the butter and sugar until light and fluffy. Add the eggs, one at a time, beating until smooth. Scrape down the sides of the bowl as needed. Beat in the vanilla extract and add the cooled cocoa mixture and stir until smooth.

Once they are well blended add the dry ingredients in three times, alternating with the milk. Add each part once the other is well integrated.

Fill each muffin cup about two-thirds full with batter and bake for about 20-25 minutes at 170ºC or until risen, springy to the touch, and a toothpick inserted into a cupcake comes out clean. (Do not over bake or the cupcakes will be dry.) Remove from oven and place on a wire rack to cool. 


Melt the chocolate in a heatproof bowl placed over a saucepan of simmering water or in the microwave but make sure to check every 30 seconds.

Heat the cream in a saucepan and bring to a boil, add to the chocolate in three parts, stir well before each incorporation.

 Finally we add the diced butter and whisk vigorously until incorporated.

 We leave our ganache cool completely before beating (I left it overnight at room temperature).

Place your mixture in your mixing bowl and blender with the paddle attachment, beat until smooth and fluffy.

 You can either spread the frosting on the cupcakes with a small spatula or if piping, use a large 2D of Wilton make lovely swirls.
